Tanzanians cook many recipes using coconut milk, which makes this rice thick. Mix in peas and carrots and serve it with grilled meat or stir-fried vegetables for a filling meal.

Ingredients

  • 2 cups basmati rice
  • 1½ cups water
  • 1 cup canned, unsweetened coconut milk
  • ½ cup peas
  • ½ cup carrots, diced
  • 1 tsp. turmeric powder
  • salt to taste

Directions

  1. Rinse the rice in cold water and drain.
  2. Add the rice to a medium saucepan over high heat with the remaining ingredients.
  3. Boil the mixture.
  4. Reduce the heat to low, and then cover the pot with a lid. Cook until the rice is tender and has absorbed the liquid, about 15 more minutes.
  5. Remove the pan from the heat and let it stand about 5 more minutes, covered. Fluff with a fork and serve.
